8 years of Mora

Mora officially opened its doors on 22nd March 2016, so we are turning 8 on Friday!

Can you believe that? Time has gone really fast…

We’re so proud and honoured of still being able to bring a Sardinian sensation to this corner of East London. We can’t believe how much has happened during these years and how many wonderful people we have met!

You know how life in London is transitional for many, so obviously a number of our customers (and team members) changed over the years because people moved away. Many of you, though, have been with us since day 1, and are still our biggest fans. And even many who moved away still come and visit when they can, or keep in touch. We can’t thank you enough for sticking with us all this time, you really have become friends and part of the family. We’ve actually had this conversion with quite a few of you recently, haven’t we?

We have seen couples getting engaged and married, then having babies. We have seen babies becoming toddlers, taking their first steps (and runs!) on our ramp by the bar counter. We have seen children growing into teenagers and young adults in the years. We are chuffed to have been able to be part of this, thank you sharing your precious moments with us!

To celebrate our birthday, we’ll be opening a very special bottle: the magnum bottle of Keramos Cannonau DOC Riserva, Tenute Soletta 2010. That’s a very special wine indeed, a beautifully elegant expression of Cannonau made with slightly late harvest grapes that see a sophisticated winemaking and oak aging process. This rich and full-bodied red opens with aromas of ripe plum, vanilla and a hint of charred topsoil. The warm, chewy palate has flavours of ripe black cherry, liquorice, baking spice and coffee bean while a note of bitter almond signals the finish.

As you may have heard, Cannonau di Sardegna wines have attracted considerable attention in the last few years for their association with longevity, as in Sardinia there are so many centenaries. So is there a better wine to cheer with on our 8th birthday?

We’ll be pouring this “long life elixir” from Friday, glasses will be available at a steal price of £5. That’s a treat not to miss!

A Spotlight on our Front of House team

You may have noticed that our Front of House team is made up entirely by women.

International Women’s Day is just around the corner on 8th March, and marks an opportunity to highlight the amazing women who make Mora who we are.

It’s generally not easy to capture our people in a picture, they usually prefer to let their work talk for them, so now it’s time to show our ladies off and give a shout out to the important part they play at Mora. If you’ve been our customer long enough, you’ll know who is who by now.

“Team Silvias” is part of our management, with “big” Silvia being our co-founder working mostly behind the scenes, and “little” Silvia managing the day-to-day on-site service. With Giovanna and Gjeni they make sure we provide a good service to our diners, always doing their best to make customers feel welcome, treating them with great care and respect, and enjoying a chat or two without being intrusive.

We work with the philosophy that smiling can elevate your mood and spread positive vibes, that a smile has the power to light up the room. They put all themselves in making sure that your experience at Mora is always positive, they create the friendly and cosy atmosphere you find here. Whether they remember about your name, your favourite wine, your dietary requirements from the previous times you visited, or they make your children have fun and make you all enjoy the time you spend with us, we can never thank them enough for doing all this so well and naturally!

They are a big part of our family, having all been with us for a quite long time, and Mora wouldn’t be what it is now without their amazing work.

A Spotlight on Pane Frattau

We haven’t been posting on our blog for a while, so now, on the occasion of Real Bread Week, we’d like to share a few curiosities with you about a dish on our menu that is based on a very special and real bread: Pane Frattau. This is one of our starters that has been on our menu for a while. Have you ever tried it?

The origin of Pane Frattau can be found in its name: the Sardinian word ‘Frattau’ literally translates ‘broken, cut into pieces.’ Originally, shepherds carried their sheets of carasau bread, some water and a piece of pecorino cheese or sausage in their saddle bag (taschedda) whilst away from home watching their herds. When they returned home, the remaining broken shards of carasau bread were then soaked in broth, layered with tomato sauce and pecorino cheese. This was then baked and subsequently topped with a poached egg.

However, according to a more curious legend, Pane Frattau was arguably invented by some Sardinian housewives to impress King Umberto I on the occasion of his official visit to Sardinia, with the few ingredients they had available. According to this legend, he really enjoyed the dish, which then became a staple of the traditional cuisine of Barbagia.

Whatever the origin of this thrifty dish is, its recipe is quite simple. Would you like a few tips on how to make it? The read below:

For each portion, you need about two sheets of carasau bread.  Quickly dip them in a large pot with boiling broth (vegetable or meat broth will both work well) to soak on both sides.

As soon as the carasau is wet, place each sheet on a plate or baking tray and dress with good tomato sauce, plenty of grated pecorino sardo cheese (go for fiore sardo if you want a very strong flavour, or for semicotto for milder flavour). You can bake it for a few minutes to make the cheese melt a bit and compact it all up (although this is optional), while you poach an egg. Plate the layered carasau, sprinkle with more cheese and top up with the poached egg. Then enjoy it whilst hot!

Pane frattau is a simple dish, but it brings out intense flavours made out of very good products which are essential for its success. You can’t certainly have a good result without a really good tomato sauce, and particularly without two outstanding Sardinian speciality products: carasau bread and pecorino sardo.

Mother’s Day

This month is about celebrating the most special person in our lives: Mum!

So we took some time to work on a new special Mora Feast for you to make Mother’s Day a little more special even if at home, with some homemade dishes ready to cook, re-heat or simply plate up.
You can choose between a 4 course feast, or a 2 course one designed for kids.

This will be available on pre-order for collection on Saturday 13th March only (with collection between 1 and 5pm on the day).

Deadline for pre-order is on Thursday 11th at 6pm.

So what’s cooking at Mora?

We have some exciting news to share with you!

You may have already noticed that we keep improving and expanding our deli shop, but the first important change is that from Monday 8th February we will be open from 11 am to 9pm, so you will be able to pop-in for your daily grocery shopping instead of waiting for the evening time or Saturday.

You will see Mora looking a lot more like a shop, with wines, beers and liqueurs at retail price, our amazing selection of artisan cheeses and cured meats, and all the general grocery essentials, biscuits, sauces, treats and preserves.. and take-away coffees. But there is more!

We will be selling our fresh homemade pastas and sauces as we have been doing since the first lockdown, but you will also be able to pre-order special ravioli and ready meals to cook at home.

Have a look at the Cook at Home section of our website to see all the available products, and make sure to check the notice required for pre-orders. There are so many ideas spinning in our heads, you’ll see that soon.

This will be a trial for a few weeks, while we wait and hope to see a bright light at the end of this long tunnel. So order online or come and browse the shop, and show us your love!

But fear not, this won’t mean we will stop our regular restaurant take-away service, on the contrary, our food will be available for collection from 12pm Monday to Saturday now!

Excited? We hope so, we are super thrilled!

Valentine’s Day

We’d like you to spend a special Valentine’s Day this year, even if at home!

So we took some time to work on a very special Mora Feast for you to cook at home, with some homemade lush dishes ready to cook, re-heat or simply plate up.

This 4 course menu will be available on pre-order for Sunday 14th February only (with collection between 12 and 5pm on the day).

Deadline for pre-order is on Friday 12th at 6pm.

Don’t forget that pre-order is essential! We need your orders in by Friday to be able to source all the ingredients and do all the required prepping.

You can choose the 4 dishes, we’ll provide them in containers suitable for cooking and provide you with cooking instructions where required. (Don’t worry, it’s very easy!).

We’ll be open for regular take-away too, so if you prefer ordering from our regular menu we’ll be here for you until 9pm 🙂

Well, that’s a wrap!
We can’t quite believe it, but it’s that time of the year again, 2019 is already heading to an end, and as the holiday season is upon us, our thoughts go to the past months: it was such a busy and intense year it went so fast!

One of the greatest joys of this season is the opportunity to say thank you to all our customers for supporting us this year. Thank you for giving us the chance to do what we enjoy, and for turning our hard work, creativity, and dedication into a fun and successful experience. We are so grateful for receiving another Tripadvisor Certificate of Excellence and for being included in The Good Food Guide again this year, without mentioning all the beautiful reviews and happy faces always brightening our days.

Thanks so much for appreciating what we do and we praise your continued backing in the future.

So it’s time to pop the Prosecco, put on our party hats, and celebrate all that we have done in the last year! Here is a toast to you!
